I am sharing one of my favorite powerhouse breakfasts: overnight chia seed and granola pudding! This simple breakfast is packed with omega-3s, beta glucan, fiber, protein, antioxidants, and whole grains. Who knew you could get so much nutrition in one meal?
Mix chia seeds with high protein yogurt and milk and then allow the chia seeds to “sprout” overnight. Allowing it to “sprout” increases nutrient absorption and naturally creates a thick, creamy pudding. In the morning, add your favorite Little Red Wagon granola and some fresh fruit. This breakfast has serious nutrition and staying power while coming together in a flash.

Ingredients:
- 1/3 cup Granola of your favorite Little Red Wagon Granola, I like to use Crunchy Monkey
- 1 tablespoon whole chia seeds
- 1/2 cup high protein yogurt
- 1/2 cup high protein milk
- 1-2 tbsp sweetener of choice
Instructions:
- Add yogurt, milk, sweetener to taste, and chia seeds into a medium sized container.
- Stir to combine and refrigerate.
- In the morning transfer pudding to a bowl if desired.
- Top with your favorite Little Red Wagon Granola and fresh fruit.
- Enjoy!
* If the pudding is too thick for your liking, feel free to add more milk
